Lentil & Potato Soup

Ingredients

1 tbsp Extra Virgin Olive Oil

1 Sweet Onion (medium, diced)

1 garlic clove (thinly sliced)

Sea Salt & Black Pepper (to taste)

1/2 cup Dry Green Lentils (rinsed, drained)

1 cup Mini Potatoes (halved)

1 carrot (chopped)

1 celery stalk (chopped)

1/2 tsp Smoked Paprika

1 tsp Garlic Powder

4 cups Vegetable Broth

1 1/2 tsps Apple Cider Vinegar

1/4 cup Parsley (chopped)

Directions

1. In a large pot, heat the oil over medium heat. Add the onion and garlic and sauté until softened, about three to four minutes. Season with salt and pepper.

2. Add the lentils, potatoes, carrot, celery, smoked paprika, garlic powder, and vegetable broth to the pot. Season with salt and pepper.

3. Bring the soup to a boil, then reduce the heat to low and simmer for 20 to 25 minutes or until the lentils and potatoes are tender. Once it's done cooking, stir in the vinegar.

4. Garnish with fresh parsley and divide between bowls. Enjoy!
